A salad that's anything but boring — salty, sticky halloumi with a touch of heat, crisp vegetables, and chickpeas for extra fibre and bite. It's quick to make and feels satisfying.

Ingredients
- Chickpeas120g
- Extra virgin olive oilSpray
- Lighter halloumi, sliced60g
- Fresh mintLarge sprig
- Garlic1 clove, crushed
- Dried chilli flakesPinch
- Sumac1 tsp
- Red wine vinegar1 tbsp
- Peach70g
- Cherry tomatoes75g
- Cucumber50g
- Hot honey5g

Method
- 01
Preheat the oven to 200°C.
- 02
Roast the chickpeas with a spray of extra virgin olive oil and a pinch of salt for about 20 minutes, until almost crisp.

Meanwhile, fry the sliced halloumi in a non-stick pan for 2-3 minutes on each side, until golden.

In a small bowl, mix the mint, garlic, chilli flakes, sumac and red wine vinegar to make the dressing.

Toss the roasted chickpeas with the peach, tomatoes and cucumber.

Add the dressing, top with the halloumi and drizzle with the hot honey and serve straight away.
